This delicious creation is ideal for breakfast, lunch OR dinner! The recipe features the protein rich black beans paired with complex starch - sweet potatoes, and some veggies for good measure.
Topped with sliced avocado and an egg (or two!) and you have a complete meal.
Recipe yields 4 servings
Ingredients: - 3 tbsp oil (Grapeseed oil used) - 3 cups or 2 large sweet potatoes (diced) - 1/2 white or yellow onion, diced - 1 red pepper, diced - 1/2 tsp paprika & 1 tsp cumin (Taco Tuesday Flavor God seasoning used) - 15oz can of black beans
Directions: 1 - Heat oil on medium in large pan. 2- Add sweet potatoes, onion, seasonings and stir. 3- Cook for ten minutes, stirring occasionally. 4 - Add black beans, stir until well blended (another 3-5 minutes)
Serve with avocado and eggs or as a side dish for any other meal!
